Ingredients

Granola Base
• 2 tablespoons Artisan Granola
(Pulse in a blender for a finer crumb, if you prefer)

Cheesecake Mixture
• 1 tablespoon cream cheese, softened
• 2 tablespoons Greek yoghurt
• ¼ teaspoon vanilla
• Squeeze of honey

Cherry Compote
• ½ cup pitted cherries
• Squeeze of lemon juice
• 2 tablespoons water
• Squeeze of honey

To Serve
• Extra cherries
• Shaved dark chocolate


Method

1. Make the Granola Base

Pulse the granola a few times if you prefer a finer crumb, then press it into the base of a small ramekin or dessert glass to create a crunchy crust. This granola base adds natural fibre, flavour and texture that pairs beautifully with creamy cheesecake.

2. Whip Up the Cheesecake Layer

In a small bowl, combine softened cream cheese, Greek yoghurt, vanilla and honey. Whisk until smooth and creamy, then spoon over your granola base.

3. Cook the Cherry Compote

In a small saucepan, add cherries, lemon juice, water and a little honey. Simmer gently for about 5–7 minutes until the cherries soften. Lightly mash the cherries, creating a jammy consistency while keeping some fruit texture — this is the heart of your Black Forest flavour. 

Allow the compote to cool completely — this stops the cheesecake from softening and lets the flavours deepen.

4. Assemble & Serve

Spoon the cooled cherry compote over the cheesecake layer. Add a few fresh cherries on top, then sprinkle with shaved dark chocolate for an extra indulgent finish.

Serve immediately, or chill for a firmer texture.
